The sweet ‘abhisa’ consumed by the Sassanids, which ruled between 226 and 652 BC in the Persian Empire, is known as the origin of Turkish delight, although it is not certain. While Turkish delight was originally called “comfortable ul-hulkum”, that is, “comforting the throat”, it was called “comfortable Turkish delight”. Finally, it was called ‘Turkish delight’ with modern Turkish. Its awareness in Anatolia started in the 15th century. It lived its most popular times in the 17th century. In the 18th century, travelers took the delight to Europe and introduced it as ‘Turkish Delight’. Turkish delight has also gained popularity here. Mass production in the Ottoman period began in 1777. It was originally produced by mixing honey, fruit syrup and flour. With the invention of starch and refined sugar, it has experienced taste changes until today.
How is Turkish Delight Made?
Turkish delight is made with citric acid, sugar, starch, food coloring and aroma. Sugar is boiled in such a way that it dissolves literally in water. Citric acid and starch are left to dissolve in separate containers. Then citric acid and starch are mixed with sugar water. In this way, it is boiled for a while. When the spoon is immersed in the mixture, it is checked whether it has a sticky consistency and it is kept for 20 hours in starchy containers. As a final treatment, it is shaped and packed on a hard surface.
